1. Breakfast at Druff’s Diner - Springfield

There’s nothing quite like a diner breakfast. Druff’s Diner in Springfield, Missouri, delivers the goods. The vibe is reminiscent of the classic American diner, yet still infused with a modern air. It reminds me a bit of the 2016 hipster trend, but slightly elevated. The selection of breakfast sandwiches is to die for. However, you can’t go wrong with one of their delicious breakfast bowls, or opt for a classic waffle. Or, because Missouri is a beautiful mix of both the Midwest and the South, order a plate of biscuits and gravy. Before or after your meal, snap a quick pic in front of the “Welcome to Springfield” mural, which is less than a 5-minute walk away. You honestly can’t go wrong with a meal at Druff’s Diner.

2. Wonders of Wildlife National Museum and Aquarium - Springfield

I’m going to go out on a limb and say it: Wonders of Wildlife National Museum and Aquarium is the best aquarium in the country. It’s truly breathtaking. Located next to the famous Bass Pro Shop in Springfield, Missouri, the museum and aquarium has more than 1.5 million gallons of water and is home to more than 35,000 animals. One of the museum's main goals is to “conserve wildlife and wild places,” and it creates a truly educational space with interactive exhibits and informational plaques that present conservation in a fun, approachable way. In addition to sea creatures, you’ll encounter a few land dwellers. My favorite was the black bear, but they also have penguins and even marmosets. Between the giant glass tanks and incredible undersea life, you’ll leave thoroughly impressed and inspired to lend a hand toward conservation.

3. Slices From Shakespeare’s Pizza - Columbia

Chicago and New York City get all the fame and glory for having great pizza, but the small city of Columbia, Missouri, has made a name for itself. Home to Shakespeare’s Pizza, you have to swing by for a slice (or a whole pie) of pizza when in town. Columbia is a college town, home to the University of Missouri, so Shakespeare’s is always open late. With fun pies like “Panda’s Pepper” and “The Darwin,” you’re sure to find something that’s equally creative as it is delicious. Speaking of the University of Missouri, Shakespeare’s Pizza downtown location is just steps away from campus. Be sure to wander over and check out the grounds while you’re over there.
