One of Virginia's many claims to fame is its creation of the Smithfield ham. In fact, many people are introduced to Virginia via this delicacy, which was born in the town of Smithfield in Isle of Wight County.

Smithfield was settled by Captain John Smith and officially incorporated in 1752 by Arthur Smith IV.

It wasn't long before the town of Smithfield became renowned for its ham-curing process. Four plants were established to cure this world-famous ham.

By law, ham that is designated as Smithfield ham must be made in the actual city, preferably from peanut-fed hogs.

The 1926 statute passed by the General Assembly of Virginia reads "Genuine Smithfield hams are those from the peanut-fed hogs, raised in the peanut-belt of the State of Virginia or the State of North Carolina, and which are cured, treated, smoked, and processed in the town of Smithfield, in the State of Virginia." The law has since been updated to allow grains as another acceptable feed.

The curing of Smithfield ham can last anywhere between 6 months and two years, depending on preference.
