I Tried Some of the Best Pancakes in the US at Con Huevos in Kentucky 

I visited Con Huevos on Frankfort Avenue to try their award-winning Tres Leches Pancakes. I loved their fluffy texture and the delicious tres leches syrup. I can't wait to return to try other fantastic breakfast dishes.

I love keeping up with what's new and exciting in Louisville. Every once in a while, however, I miss a fantastic local restaurant. I'm embarrassed to admit I had never been to the beloved Mexican breakfast restaurant, Con Huevos. I had to correct this mistake right away. So, one recent autumn morning, I treated myself to an incredible breakfast at Con Huevos on Frankfort Ave in Louisville.

Con Huevos opened in the spring of 2015 on Frankfort Avenue. The small restaurant seated only 21 people, but the business has grown remarkably since then. There are now five locations across Louisville: on Hurstbourne Lane, in Norton Commons, in Holiday Manor, the OMNI Hotel, and on Frankfort Avenue. The restaurant has collected impressive accolades, including being listed 8th in the top 25 places to eat pancakes in the U.S. by Travel and Leisure in 2018.

I knew I had to try the restaurant's legendary Tres Leches Pancakes, but the menu had so many fantastic options that I briefly considered ordering more than one meal. The Churro Waffle, Huevos Rancheros, and Burrito Gordo with eggs, potatoes, chipotle cream, and Oaxaca cheese were particularly tempting. I was impressed by the variety of options, from omelets to French toast and breakfast sandwiches. I stuck to my original plan, however, and ordered the award-winning pancakes and coffee.

While I waited for my food, I enjoyed Con Huevos' friendly and upbeat atmosphere. The restaurant was bright, with big windows facing Frankfort Avenue and lively, energetic music playing overhead. Several people ate alone as they worked, while others dined in small groups. It's a great place for a casual breakfast with a friend or a morning meeting.

It didn't take long for my food to arrive. The friendly waitstaff delivered a pile of three thick and fluffy pancakes covered in fresh bananas and strawberries and the signature white, creamy Mexican tres leches syrup. The pancakes had a fantastic texture, and the syrup was perfectly sweet. The syrup was a little thinner than maple syrup, allowing the pancakes to soak it up in the most delicious way. The coffee was dark and rich, perfect for the chilly morning.

I loved the breakfast and can't wait to return. Although I'd love to check out some of the restaurant's other locations, I bet the Frankfort Avenue spot is hard to beat. It's a lively street, with plenty of walkers and cars going by.
