Everything on the menu is absolutely divine, but this Italian wood-fired oven is where the real magic happens.
Coda di Volpe is certified by the Associazione Verace Pizza Napoletana, an organization from Naples that holds restaurants to strict standards.
To hold this certification, Coda di Volpe makes its dough with soft, 00 Italian flour, and uses only San Marzano tomatoes, fresh mozzarella, and other top-quality ingredients.
Then, it's placed in a wood-fired oven at temperatures between 806 and 896 degrees Fahrenheit and baked for just 60-90 seconds.
The result? Incredible Neapolitan pizza with a crust that's soft and chewy and an ooey, gooey texture that's like nothing else in the world.
