We're not sure if official state desserts are a thing, but if they were then Idaho's would definitely be the ice cream potato. This strange dessert may have non-Idahoans scratching their heads, but it's an iconic sweet treat for anybody who has lived in the Gem State for a while. For those who haven't had an ice cream potato, don't worry. It's not actually made from potatoes! But you definitely have to try it for yourself, so head to the birthplace of this iconic dessert where you can get it on the Westside Drive-In menu. It is definitely worth a taste!

Serving the community since 1957, Westside Drive-In is considered a staple in the city of Boise.

Known for its mouthwatering food and nostalgic atmosphere, it's here that the famous ice cream potato was initially created!

The old-fashioned eatery has won numerous local and regional awards over the years, including the title of "Treasure Valley's Best Drive-In."

It was even featured on the hit Food Network show with Guy Fieri, "Diners, Drive-Ins, and Dives," a fact that you'll be reminded of thanks to a gigantic signed poster at the drive-in entrance.

It's clear the locals have a lot of love for this joint, and it's easy to see why. The food really does live up to the hype!

This place may look like a typical drive-in, but the food is far from typical drive-in food. In fact, Westside prides itself in the fact that the majority of their menu is made from scratch.

The drive-in's menu is vast and contains many must-try options. One of the drive-in's most iconic items is the Prime Rib Dinner.

Served with a baked potato, roll, and au jus and horseradish, this Prime Rib dinner rivals that of any Idaho steakhouse!

However, the drive-in may be most famous for creating the one and only Idaho Ice Cream Potato.

It looks like a real baked potato—complete with all the fixings—but don't be fooled. It's simply a scoop of vanilla ice cream covered in cocoa powder, whipped cream, and nuts. And yes, it's as delicious as it sounds. Other than the potato, it looks like something you'd find in an ice cream shop!

It's definitely a bit quirky, but we can't help but love this strange dessert.

In fact, Idahoans loves the Idaho Ice Cream Potato so much that it's become an iconic fair and festival food. Always keep an eye out for the Ice Cream Potato trailer at any local outdoor events!
