Glide Pizza has roots in Brooklyn; owner Rob Birdsong spent over a decade visiting New York's iconic slice shops before returning to his home state to raise a family. He brought back his passion for New York slices with him, ultimately creating his own shop that would deliver the quick convenience of this big-city staple.
So, what is it about New York-style pizza that makes it so iconic? To start, the dough is thin and crispy. The pies are large, and a single slice is typically all you'll need for a filling meal or hearty snack. Another tell-tale sign of New York-style pizza is crust thin enough that you can easily fold it over in your hand, making for an irresistible sandwich-like bite.
The pizza at Glide certainly lives up to the lofty New York standard, incorporating these traditional techniques with a spin of local creativity. Pizzas are sold either by the slide or in 20-inch varieties. There are about half a dozen options to choose from, or if you're feeling creative, you can build your own. The classic pepperoni is a local favorite, served with two kinds of mozzarella cheese plus thinly sliced pepperoni—the kind that curls up after it's baked. There's a vegan pie for those who don't eat dairy, and the liquid mozzarella used is the perfect alternative to the real thing.
And don't forget the sides! Made-in-house pickled pizza peppers, Glide's Atlanta Ranch™, and Mike's Hot Honey complete this culinary experience. Two salad options, a classic Caesar and arugula, are also available.
