A Green Bay, Wisconsin Butcher Shop Still Makes Traditional Belgian Sausage And It’s Absolutely Mouthwatering

Belgian immigrants in Wisconsin introduced a unique sausage called Belgian Tripp, which is still made today by Maplewood Meats.

In the 1800s, a group of Belgian immigrants formed a settlement in Wisconsin and brought a culinary tradition that still continues today. Belgian sausage can be found in a few Wisconsin shops, including Maplewood Meats, a longtime Green Bay butcher shop. The sausage has a surprising secret ingredient and it's well worth seeking out.

Wisconsin saw a big wave in immigration from Belgium between 1853 and 1858. They arrived speaking French and settled a wooded strip of land that extended from Green Bay up into Door County. By the 1880s, there were more than 5,000 Belgians living in the area.

You can still see some of the old Belgian farmsteads and there’s still a community called Brussels, but most signs of the community have faded.

One element of the past is alive and well. Belgian sausages called Belgian Tripp are a local favorite, and can be found if you know where to look.

Maplewood Meats makes batches of the sausage that are simply delicious. They look like a regular bratwurst, but they have a little secret inside.

They are pork sausages stuffed with spices and a healthy dose of cabbage. It might seem a little unusual to eat a sausage stuffed with cabbage, but it’s simply delicious.
