The Sassy Biscuit Co. in Billings, Montana, offers a unique and creative brunch experience with a focus on perfectly plated dishes.
A "bruncherie" is exactly what it sounds like: a high end brunch-focused eatery that tends to focus on unique and creative dishes (which often happen to be so perfectly plated they'll turn you into a food photographer). Needless to say, while Montana has more than its share of breakfast and brunch spots, it isn't every day you see something like this in the Treasure State. But now that The Sassy Biscuit Co. is open in Billings, Montanans can enjoy the most important meal of the day in a whole new way.
The Sassy Biscuit Co. opened in the spring of 2018 in Billings, much to everyone's delight.
Owner Jilan Hall-Johnson started making biscuit waffles for her own children, and what she calls a ""silly idea" eventually became a fantastic business idea.
Together with her husband, DeMarco Johnson, Jilan designed this modern, sleek space and got to work perfecting the bruncherie menu.
DeMarco’s military experience allowed the couple to try food from all over the country, and his culinary experience has been a huge asset to the business. Jilan has culinary experience herself, as well as a degree in counseling.
Jilan wanted this place to be completely different than anything Billings had ever seen, and it's safe to say has been successful.
The couple decided to bring some big city flair to Billings, which has a small town feel despite actually being Montana's largest city.
The food here can only be described as magnificent.
Whether you're craving something savory or a sweet treat, you'll find it on the menu.
The Sassy Biscuit Co. is obviously famous for the perfectly flaky and delicious biscuits, which you can order a variety of different ways.
This is one of the Pressed Shortcakes, a waffle-pressed biscuit that will blow your mind (or at least impress your tastebuds).
You can also order from the Spooned Cakes (dropped biscuits) or Griddled Cake section of the menu.
They even serve several different porridges, steel-cut oatmeal and granola.
And since the key to creativity is trying new things, you'll almost always see a special or two here.
This Caramel Apple Bread Pudding French Toast was served last month, and it's just as delicious as it looks.
The Sassy Biscuit Co. is open daily at 7 a.m. for all your breakfast needs.
They close at 2 p.m. Sunday - Tuesday and 7 p.m. the rest of the week.
