Flagstaff House is perched on a mountain high above Boulder. The views of the city are exceptional. The building was first built as a summer cabin in 1929. In 1937 it was purchased by a park ranger for special events, and in 1954 it became a restaurant.

It's currently co-owned by general manager Adam Monette and executive chef Chris Royster.

This place is elegant and classy. Patrons are expected to dress appropriately when visiting, of course. After all, this is an award-winning fine dining restaurant.

Almost everyone wants to sit outside on the deck. Due to demand, Flagstaff House seats patrons in the order that they arrive - you cannot reserve a specific table when dining at this restaurant.

Guests can order something from the Canapé menu to start. Scottish Smoked Salmon or Beef Tenderloin Tartare are both excellent options.

After the starter, guests can choose from two options. The first option is the restaurant's Four Course Menu; each course has four or five options from which to choose. Alternatively, guests can choose the Chef's Tasting Menu. It consists of eight courses with each dish determined by the chef.

The offerings on both these menus change with each season. Some examples of potential dishes served here, though, include options like this Colorado Lamb with Green Garlic, Fava Bean, Fiddlehead Fern and Artichoke.

Or, you might like this Texas Elk with spring garlic, green chickpea, hedgehog mushroom, and belper knolle.

Perhaps you'll choose this Mikan Madai Crudo with bamboo rice, ginger, fresh wasabi, and shoyu.

Or maybe you'll be drawn to this Chatham Atlantic Scallop with gold potato, celery root, bacon, and parmesan.

This fungi-focused dish could be another excellent option. You might consider the Cordyceps “Carbonara” with pancetta, ramps, watercress, and parmesan if you like mushrooms.

Flagstaff House is also known for its wine. In fact, this establishment has won the coveted Wine Spectator Grand Award every year since 1983!

After an impressive, exceptional meal, you'll leave on an even higher note after trying dessert. This Dark Chocolate Pot de Crème with strawberry, hazelnut praline, and caramelized milk chocolate looks incredible.

This Dark Chocolate Torte with white miso, chestnuts, and pâte brisée is surely quite scrumptious, too.
