Founded in 2017, Pêche Restaurant is a gourmet ensign in the town of Palisade, Colorado. Pêche Restaurant also works with local farms and suppliers to provide wholesome meals.

Chefs Matthew Chasseur and Ashley Fees Chasseur remodeled the interior of the restaurant before it first opened to the public, and every aspect of the interior was chosen with careful intention. The result is a bright, open space that feels both organic and comfortable, and complements perfectly the ingredients present in their menus.
In addition to their iconic indoor seating, Chef Matthew Chasseur also built several outdoor “clubhouses” which are whimsically themed and equally comfortable as the indoor seating, with updated heating and lighting.
When the pandemic threatened many newly-opened restaurants, Pêche Restaurant adapted quickly. On top of the private clubhouses, Pêche Restaurant provided meals to local first responders. Additionally, the restaurant put together meal kits that patrons could take home and cook themselves that were crafted of the same gourmet ingredients and great care that go into all of the restaurant's meals.
Lying quietly to the side of Interstate 70, Pêche Restaurant in Palisade Colorado is easily missed but provides an incredible culinary experience to those willing to try something new and explore the unexplored. You can learn more about Peche on its website or Facebook page.
