Boulder’s Flagstaff House Is an Upscale Date Night Restaurant That Has It All

I'd wanted to try Flagstaff House in Boulder, Colorado, for years. I finally made it and my experience was impressive beyond measure.

A few years ago, I read an article about the best restaurants in Boulder, Colorado – and that’s when I first learned about Flagstaff House. Boulder is full of fantastic restaurants but this one seemed to be above and beyond any place I’d dined before in every way. I was intrigued and curious about it, and I read its entire website. I knew I had to go – and soon.

Unfortunately, if you’re anything like me, you know how that goes. Time passes quickly, and even though I live in the southwest Denver suburbs, I don’t really get up to Boulder very often. Still, I always kept Flagstaff House in the back of my mind, and I knew I would make it there eventually.

That time finally came recently. My partner and I have decided that we have far too many belongings, so we’ve begun treating each other with experiences for special occasion gifts. When he asked what I wanted for Christmas 2024, I said I wanted to go to Flagstaff House.

Our anniversary is January 5th, so going to Flagstaff House after the hustle and bustle of the holiday season was behind us made the most sense. We made a reservation and looked forward to the exciting meal to come.

Flagstaff House has been serving Boulder as a restaurant since 1954, but it was first built as a summer mountain cabin by Chicago schoolteacher Hattie Bilchert in 1929 . It was later purchased by park ranger Joe van Gorder in 1937 to be used for special events, but since the Buelkes family purchased it in the 1950s, it's been used as a restaurant ever since. Perched atop Flagstaff Mountain overlooking the city of Boulder, it's an incredible spot to dine with a spectacular view. Restauranteur Don Monette bought it in 1971, and it's been in the Monette family ever since.

Over the years, the Monette family expanded the space and added outdoor terraces in addition to adding more indoor seating. Over the years, this restaurant has won countless awards including 42 Forbes Travel Guide Four Star ratings, 33 consecutive AAA Four Diamond ratings, the Wine Spectator Grand Award every year since 1983, and others. Even if you don't know all of the above, however, as soon as you step food into Flagstaff House, its clear that the overall experience is going to be exceptional.

We arrived for our 6:30 reservation on time. Unfortunately, because we visited in January, the sun had already set so we missed out on the view. That was fine with us, though, becuase what we came for was inside. As we were led to our table, every staff member we passed welcomed us in. I was already impressed.

I've eaten at my share of fancy restaurants, but Flagstaff House seemed fancier than them all. As soon as we sat down, we were greeted by waitstaff who were clearly not only ready, willing, and able to serve us, but were also eager to do so. The enthusiasm at this restaurant was palpable, and we were excited to see how things would unfold.

We started our meal with an Artisan Cheese Selection plate which was beautifully presented and thoroughly explained to us. The cheeses were all fantastic and the mix of flavors and textures already had us impressed.

For our meals, we chose to dive into the prix fixe menu which included four courses that consisted of four choices each round. My partner and I decided to order different things so we'd be able to try a little of two different dishes for each course, and if you visit Flagstaff House yourself, I recommend that you and your dining companion do the same.

Our first course had us trying a uniquely presented Maine Lobster Roll and a Maine Lobster Soup. I love lobster so I certainly didn't mind that we both ordered dishes that included it. The soup was some of the best soup I've ever tasted, and the lobster roll was quite good, too - although it was my least favorite of the many things we had the opportunity to try that night.

Our second course choices included Flagstaff House's Day Boat Atlantic Scallop and Ora King Salmon. These, too, were incredible. The portions were small - as is common in fine dining - but every bite was even better than the last. We certainly did not feel shortchanged with the smaller portions; they encouraged us to truly savor every delectable bite.

For our mains, my partner ordered the filet mignon, which came with a twice baked potato, brussels sprouts, bacon, and a mushroom bordelaise. I opted for the Pan Seared Lion's Mane which was paired with potato puree, horseradish, baby carrot, frisee, and a vegetable demi over the top. We continued to be absolutely blown away by the beauty of the dishes and the flavors we enjoyed. The filet was one of the best pieces of meat I've ever enjoyed, and my lion's mane was elevated to a level to which I'd never before experienced in the mushroom realm.

The final course, of course, was dessert. I ordered the Milk Chocolate Mille Feuille, which was a crisp chocolate treat with tahini, cinnamon, and toasted meringue. My partner chose the Candy Apple Baba, which was reminiscent of an apple turnover, but with apple cider, granny smith apples, calvados, mascarpone, and orange. Every bite of each of these desserts was heaven on a spoon, and although I was feeling rather full at this point, I ate as much of it as I could.

Between each of these courses, we were offered additional items at no charge, which was a bonus. Small palate cleansers and little treats made us feel extremely welcome at Flagstaff House, and added so much to our meal and experience. When it came time to go, they even sent us home with treats - in that case, small loaves of bread, which seemed to be cornbread based - with little bits of fruit inside.

On numerous occasions throughout our meal, staff stopped by our table to wish us a happy anniversary, and that was a nice touch as well. In fact, they even printed a happy anniversary greeting on our menus, which we were able to take home as souvenirs, and we were offered and enjoyed a final anniversary chocolate treat before we left, too.

Overall, our meal at Flagstaff House was even better than I possibly could have imagined. In fact, I can say without a doubt that my meal there was one of the best meals I have ever had - anywhere - in my entire life. The attention to detail was amazing, the service was top notch, and the food was consistently at a level that was just above and beyond almost any other restaurant I've visited.

All the years of waiting to go to this restaurant were worth it - and now I want to go back every year. We likely will. I highly recommend Flagstaff House to anyone wishing to have an exceptional meal. It's perfect for a date, a celebration, or anytime. Flagstaff House takes pride in what they do, and it shows. Don't miss this spot high above Boulder - you're sure to have a meal there that you'll never forget.
