This Colorado Dining Experience Has Been Called One of the Best Restaurants in the U.S.
Brutø in Denver, Colorado is a Michelin star recipient and is a place where food is art. You'll love it!
Are you looking for a meal in Denver that is not only tasty and satisfying, but that is also breathtakingly beautiful, too? If so, you're going to love Brutø in Dairy Block in LoDo. This restaurant is like no other; the food served here is truly art served on a plate.
Brutø has been recognized by the Michelin Guide for the past two years; it received both a Michelin Star and also a Michelin Green Star for its dedication to sustainability, and it has received many other notable local and national accolades as well. For one example, The New York Times said that the restaurant's hearth bread is one of the best dishes of any kind in the entire nation. Wow!
As you might guess, dining at this restaurant is quite expensive - but you'll see that it's well worth it. Brutø is not just a restaurant - it's an experience. It's unusual to find a restaurant of this caliber outside of places like New York, Chicago, Las Vegas, and Los Angeles. We're so lucky to have a spot like Brutø right here in The Mile High City.
To further illustrate and clarify the level of this restaurant, it's important to point out that it's part of the Id Est Hospitality Group. This restaurant group also includes another Denver restaurant with a Michelin Star - The Wolf's Tailor - plus Dry Storage bakery and mill, American restaurant Hey Kiddo, and bar Ok Yeah which are also all in Denver. Every one of these spots is well-rated and has been raved about by foodies and food critics.
Furthermore, Id Est Hospitality Group is also responsible for Michelin Bib Gourmand's award-winning Basta in Boulder and hip and creative New American spot Nonesuch in Oklahoma City. Id Est Hospitality Group founders Kelly and Erica Whitaker won Best Restauranteur at the 2024 James Beard Awards; as you can imagine, that's one of the most coveted awards in food that there is, and it's a huge honor to win it.
Executive Chef Byron Gomez is more than just a chef - he's an artist. Dishes at Brutø focus on fresh, locally sourced ingredients, and every dish is made with the intent to let very little of each ingredient go to waste.
The tasting menus at Brutø also attempt to embrace the artistic concept of brutalism in their design. If you're not familiar with brutalism, it's a style of architecture that was popular in the 1950s and 1960s that valued functionality and plainness over beauty and excess. Most cities in the United States today still have some buildings standing that are excellent examples of brutalism, and you can see even more examples in other countries; Eastern Europe is well-known for truly diving in full force into this design style during its most popular decades.
Brutalist designs are often easy to find due to the fact that they are primarily constructed using steel and concrete. At first glance, brutalist buildings appear boring and uninspired, but this simplicity is deliberate. In the austerity, with attention and contemplation, one can find much beauty.
This is Brutø's philosophy and angle, too. Although the dishes served appear quite simple, they are actually quite complicated, and your palate will understand this deeply upon the first bite and in every bite thereafter. The food at Brutø is high art in this way.
You'll be amazed as each course hits the table. It's a feast for the eyes, even in its simplicity! You'll be even more amazed as you take each bite.
Brutø is a very special restaurant and we are so lucky to have it in Denver. If you want to go out for a very special meal - especially if you want to impress your companions - this is the perfect option. Although Brutø is out of the price range of most average Denverites, if you're someone who loves high-end, upscale, award-winning restaurants, don't miss out on Brutø. Your meal at this spot is sure to be one that you will always remember - and that you will talk about for years to come.
