Kristen Hall founded Bandit Pâtisserie in 2013 as a pop-up and opened its first brick-and-mortar store in Birmingham in 2019. In 2025, the beloved bakery moved to a much larger downtown space at 2323 1st Avenue South. Kristen Hall also owns Bar La Fête, a wine bar and bistro on Birmingham's Morris Avenue. Hall previously owned The Essential, another restaurant on 1st Avenue, serving tasty Southern food made from seasonal ingredients, but sold her ownership in 2024.

Bandit Pâtisserie serves a bevy of rotating pastries, including croissants, scones, muffins, macarons, monkey bread, pop-tarts, and more. It also serves fresh breads and mouthwatering cookies in flavors like Brown Butter and Snickerdoodle. The pastries are striking, with golden brown, flaky crusts.
Bandit's pop-tarts are made from scratch daily and come in Nutella and strawberry flavors. It sells hundreds of these flavorful treats each week. The strawberry pop-tarts have a sugary, flaky crust topped with pale pink icing and colorful sprinkles. I can't think of a better way to start the day than a delightful and nostalgic handmade pop-tart and a hot cup of coffee.

Speaking of coffee, Bandit Pâtisserie serves espresso and tea beverages. The espresso drinks include cappuccinos, cortados, mochas, and lattes. Customers can also enjoy drip coffee, cold brew, and house lemonade. Its coffee is roasted by Domestique, a local coffee roaster named Best Roaster in Alabama in 2022 by Food and Wine Magazine. Rishi Tea & Botanicals provides teas.
The small-batch bakery has a gorgeous interior. The coffee bar features a large bank of rich green-painted cabinetry, a clear pastry case, and a collection of colorful mugs. The store has a massive wall of windows, flooding the space with natural light. The interior also has beautiful indoor and outdoor seating areas. Inside, green beadboard and lovely botanical wallpaper cover the walls.
