I Ate at Toast MI: A Strip Mall Surprise in Washington That Should Be on Everyone’s Dining Bucket List

Craving a good sandwich? Head to one of my favorite Bánh mì spots tucked in small-town Lacey. Toast Mi proves that big flavors can come from small locations!

Let's take a moment to appreciate the humble sandwich's great duality. Treated with the correct reverence, the sandwich is one of the world's best foods. But underwhelming or less-than-fresh ingredients stuffed between slices of dry bread? Then you have something to feed the garbage can, not yourself.

The popularity of sandwiches means you can find variations all over the world, inviting culinary discovery on familiar terms. My favorite? The bánh mì—a delicious Vietnamese concoction of perfectly seasoned meat, bright pickled vegetables, and crackling baguette bread. You can find versions of this dish across Washington State, but my local go-to is Toast Mi in Lacey—a spot that proves big flavors can come from unexpected places.

Toast Mi also has locations in Tacoma and Federal Way. Still, Lacey is my local shop, so I'm required to say it's the best. The ingredients are always fresh, the flavors balanced, and the service is friendly and quick. It’s the perfect spot to grab lunch before a day out. I recommend swinging by for picnic grub—the perfect reward for tackling trails in a nearby park like Capitol State Forest.

Traditionally, bánh mì are eaten as breakfast or a light snack. Even I, as a diehard sandwich fan, usually prefer something a little more substantial for dinner. For hungry diners like me, Toast Mi offers a series of rice bowls. I usually opt for the special rice bowl, a generous portion of two meats (I get chicken and beef), a fried egg, crisp veggies, and a creamy sauce drizzled on top. Pro tip: You can buy that sauce by the bottle. I did, and it quickly became a staple in my own kitchen, enlivening otherwise grab-and-dash salads and lunches.

Beyond food, Toast Mi is a worthwhile destination for a drink. Whether you're a fan of tea or coffee, the creations here are invariably delicious and creative. Live adventurously with the berry-colored Oreo-Taro libation or take a more conventional—but no less refreshing—approach and order a traditional milk tea like myself. Despite the name, this drink is dairy-free. I get mine with light sweetness, light ice, and a heavy-handed dollop of black pearl tapioca. On hot days or over-scheduled afternoons, it’s a simple pleasure that feels like a small ritual of self-care.

Don't judge a book by its cover! Whether you're looking for a satisfying rice bowl, a crave-worthy sandwich to power your next outdoor adventure, or simply a time-out from life's hustle and bustle, Lacey's Toast Mi belongs on your radar. If you're anything like me, this local eatery will quickly carve itself a dedicated slot in your weekly eat-out lineup. And by the time you're out the door? You'll already be imagining the next time you can swing by for a bite!
