But nearly a decade ago, a restaurant opened in town that changed the entire dining scene. The Black Cypress will celebrate its 10th anniversary this year, and it's better than ever.

The interior is cozy and intimate, and it always feels welcoming.
The Black Cypress was opened by Nick Pitsilionis, a chef who was born in Greece and raised both there and Alaska.
Nick traveled the world before settling down in the Palouse and deciding to open an eatery of his own.
Nick decided to create a rotating menu that allowed room for innovation, but you'll always find plenty of classic Greek and Mediterranean options.
This means grilled meats, pasta, salads, and seafood are always available.
You might see Nick shopping at the nearby Moscow Farmers Market, gathering ingredients for the evening's meals.
Everything is as fresh and local as possible.
This spot is also known for its creative craft cocktail menu.
The bar manager, Lars Lunstrum, created quite a few of them, helping turn the space into a world class cocktail destination.
This might not be the kind of place you'd expect to see in a rural college town, but The Black Cypress is thriving.
It's perfect for a date night or a birthday celebration.
The Black Cypress is open Monday - Saturday for dinner from 5 p.m. - 10 p.m.
Reservations are highly recommended, especially on the weekends.
