As dairy farms go, Heber Valley Artisan Cheese is fairly small, but it's been in operation for nearly 100 years, and it makes some of the best-tasting milk, cheese, and ice cream in the state.

You'll find the shop at 920 River Rd., Midway, UT 84049.

The Kohler family owns and operates the farm. It began with a dairy that produced milk, and they added on artisan cheese production in 2011. Throughout the years, this family-owned operation has grown and expanded.

150 cows calls the Heber Valley home, and they're not cooped up in a barn - they roam through the pastures here, eating grass all day. The cows at Heber Valley Artisan Cheese are never fed corn or GMO grains, and the milk is rich and creamy.

The result? Creamy, delicious cheese!

The cheese here consistently wins awards from the American Cheese Society, as well as the Specialty Food Association.

Visit the shop in Midway, where you'll find a huge assortment of cheeses, gourmet food items, and hand-crafted gifts.

One entire wall of the shop is a huge, refrigerated case full of all kinds of cheese.

You'll want to try some samples to find your favorites. Heber Valley Artisan Cheese makes all the flavors you grew up with, as well as unique cheeses like Salsa Pepper Jack, Vanilla Bean Rubbed Cheddar, Cracked Pepper and Chive Infused Cheddar and more.

Take a tour of the dairy to see the cheese-making operation. You'll get a peek into the Cheese Making Room and Cheese Cave, and learn all about how the cheese is made from start to finish.

Tours are offered on Tuesday and Thursday from 11 a.m. to 1 p.m., but you must make a reservation at least 24 hours in advance by calling (435-654-0291). Tours cost $8 per person.
