Papi Queso came on the food truck scene in 2012, just when the rise of the mobile restaurants were making their mark. The original concept included five distinct grilled cheeses with signatures including the big cheesy and the pig mac which came with pulled pork, mac n cheese and bourbon onions.

Papi Queso saw quick success gaining a following, mainly because for many, their sandwiches were elevated versions of a childhood favorite. You can't beat comfort food -especially when served in an inventive yet familiar way.
