A Historic Bank Is Now New Mexico’s Best Restaurant and Hotel

I love finding old historic buildings that once housed other businesses but have been transformed into something that suits our modern-day needs. Take, for example, The Trinity Hotel & Restaurant. Once a historic bank, the building has been transformed and repurposed into a hotel as well as an exceptional establishment for dining in New Mexico.

Back in Carlsbad in 1892, the First National Bank opened its doors in the beautiful building pictured below. This building had also served other purposes, including those of the Carlsbad Irrigation District and the offices of a newspaper.

As with many century-old buildings, this one eventually fell into disrepair and decay. Luckily, in 2007, the building was purchased and lovingly restored into what it is today — a luxury boutique hotel with a fine dining restaurant. The hotel offers nine well-appointed suites, each carefully designed to preserve some of the building's historic architectural elements.

Now, you don't have to be a guest at the hotel to enjoy its on-site restaurant and bar. In fact, if you happen to be in town, you should make an effort to dine here — the food is deliciously divine! From classic dishes to internationally inspired options, your taste buds can embark on a flavorful adventure.

Come here for breakfast or weekend brunch and enjoy a hearty plate of French toast, pancakes, a Monte Cristo, the Trinity Breakfast Burrito, or Huevos Rancheros. For something lighter, you can enjoy a cinnamon roll or a scone alongside a cup of tea or coffee. What a great way to start the day!

As for the lunch menu, there are several Mexican-inspired options, such as chicken enchiladas, a smothered burrito stuffed with seasoned beef and topped with red or green chile, or a green chile bacon burger. While the breakfast and lunch menus offer items such as bowls, sandwiches, and salads, dinner is predominantly Italian-inspired. With a variety of pastas and dishes like chicken parmesan and chicken marsala, you'll love the food here, especially when paired with a glass of wine.

Breakfast and lunch are served at The Trinity Tuesday through Saturday. Brunch is served on Sundays, and dinner is available every day from 5 p.m. to 9 p.m. You can't go wrong with any choice from the menu. However, if you love burgers, the green chile cheeseburger is a must-try.
