The word “underground” often has a negative connotation and implies that something is forbidden, off-the-cuff, or just plain unpopular, so when we heard that there is actually an underground restaurant here in Colorado, you know we had to check it out! As it turns out, subterranean places can be flat-out charming and delicious, and this underground Colorado restaurant is unlike any place we have ever eaten!
