What is it about the familiar tastes of home that are so enticing? For award-winning chef, Hosea Rosenberg, it’s the authenticity and seasonal ingredients of his childhood home in Northern New Mexico that inspired him to open his newest restaurant in Boulder. Santo, a farm-to-table restaurant that’s menu is centered around a local favorite – chile, will give customers a taste of the Northern New Mexican region with a delicious modern twist.
The cuisine of his roots is a delicious blend of Spanish, Native American, and Mexican foods with a focus on the flavor of chile throughout a majority of the dishes. Rosenberg is excited to bring the “Real deal” to Coloradan’s who have a great affinity for the beloved chile.
