The Flagstaff House was originally built as a cabin retreat in 1929 and later transformed into an elegant summer restaurant in 1954. Chef Mark Monette describes his approach to cuisine as follows: "My favorite thing in the world is finding fantastic local produce — getting to know the farmers, ranchers and fishers, building a relationship with them, figuring out how to take that beautiful thing they harvested, and prepare it in just the right way to make it shine for our guests."

Flagstaff House is located at 1138 Flagstaff Road, just five minutes from downtown Boulder.
The restaurant is open for dinner Sunday through Friday from 6pm to 10pm, and it opens at 5pm on Saturday. They prefer to keep a business casual dress code, including collared shirts, casual pants, slacks, skirts and dresses (no shorts, T-shirts, or athletic attire).
