Flo's Kitchen has been in business since October 30th, 1990. Originally opened and operated by Florence Williams, the family business was taken over by her daughter after Williams passed away at the age of 80. From the crack of dawn to noon, it's no surprise to see a long line of cars wrapping around, sometimes even overflowing into the street. While there's a small seating area inside the restaurant, many prefer to grab-n-go from the comfort of their car. What makes it so special is there's no technological system transmitting your order. From the start, there's always been a woman outside who takes your order, runs into the kitchen to give them your order, then repeats the process with a new customer while you pick up some bangin' biscuits from the window. But what makes these biscuits so amazing and gives them a cult-like following? The secret to their size and flavor is in the addition of lard to the recipe. Beginning at 3 A.M. each morning, biscuit makers hand pat and shape each biscuit without the help of a cutter. Hoop cheese is added to the biscuit and the dough encases the cheese. Williams made lard biscuits because she preferred the taste, but the added ingredient results in a tender biscuit that holds its shape without crumbling and the hoop cheese adds a crisp, golden edge to the biscuit when it sometimes finds its way outside.
