What if I told you there was a place in North Carolina where you can get biscuits the size of your hand? Then, what if I told you that this place was tucked away into the quiet, small town of Wilson? While it might be a drive for some, I can say for certain that drive is worth it.
Flo's Kitchen has been in business since October 30th, 1990. Originally opened and operated by Florence Williams, the family business was taken over by her daughter after Williams passed away at the age of 80. But even when first opening some 26 years ago, Flo's didn't need any type of marketing to get business booming. The amazing, ginormous biscuits already had a pretty large following. On the first day of business, cars wrapped around the building with three biscuit bakers barely meeting demand.
Even years and a few additional biscuit bakers later, Flo's remains relatively the same. From the crack of dawn to noon, it's no surprise to see a long line of cars wrapping around, sometimes even overflowing into the street. While there's a small seating area inside the restaurant, many prefer to grab-n-go from the comfort of their car. What makes it so special is there's no technological system transmitting your order. From the start, there's always been a woman outside who takes your order, runs into the kitchen to give them your order, then repeats the process with a new customer while you pick up some bangin' biscuits from the window. The simplicity and commitment to classic, southern hospitality has kept loyal customers and their go-to biscuit orders coming back time and time again.
But what makes these biscuits so amazing and gives them a cult-like following? The secret to their size and flavor is in the addition of lard to the recipe. Beginning at 3 A.M. each morning, biscuit makers hand pat and shape each biscuit without the help of a cutter. Hoop cheese is added to the biscuit and the dough encases the cheese. Williams made lard biscuits because she preferred the taste, but the added ingredient results in a tender biscuit that holds its shape without crumbling and the hoop cheese adds a crisp, golden edge to the biscuit when it sometimes finds its way outside.
Aside from biscuits, Flo's serves a variety of fixin's and sides like breakfast plates, hash browns, French toast and grits. Wednesdays get extra sweet and special with Flo's original recipe sweet potato biscuit.
While other items are to be considered, if it's your first time you must try a biscuit. Fillings include eggs, chicken, ham, cheese, sausage links...but the true star filling is the pork tenderloin. Each individual, hand-cut piece is covered in seasoned floured then fried to perfection. Even if you're not dining inside the restaurant, the floating scent of cooked pork sometimes lingers to the road and around the building. It's so intoxicating, you'll find yourself suddenly turning into Flo's Kitchen real quick and ordering one yourself.
Even now I find myself craving a chicken, egg, and cheese biscuit from Flo’s. I think the best biscuits are truly hiding in small town North Carolina, but get one now before the secret gets out!
