Twist's menu combines traditional French cuisine with a modern twist, and Chef Gagnaire's dishes are as beautiful as the restaurant itself. One first course offering: Raw and poached shellfish, marine broth, yuzu-yogurt sorbet, and grated chestnuts and hazelnuts.
Another tempting entree is the Muscovy duck aiguillettes with green pepper, casis bigarade sauce, braised daikon turnips, Marguerite potatoes, and huckleberries.
