Tucked away in a not-easy-to-find farm in Blue Mounds on 160 acres is Cress Springs Bakery. In the warmer months, they welcome visitors for pizza on the farm. The rest of the year, you can buy bread directly from them on Fridays only.
But however and whenever you get yourself out to Cress Springs, we promise the bakery is worth it.
Bakery trends come and go, but for 20 years, Cress Springs has been making whole-grain, hearth baked deliciousness that surpasses any diet trend.
Using a building on Cress Springs Farm, these guys source their ingredients from their neighbors, if possible. Then they mill all their own grains and flours, preserving the flavors and nutrients in them.
Their oven is built by legendary mason Alan Scott and is the reason one of the bakers left their job in NY to join the operation.
Everything at Cress Springs is naturally fermented - there are no chemical yeasts involved.
They slow-ferment, taking almost 24-hours to let their breads develop, creating amazing flavors and developing the dough to be incredibly edible and digestible.
They use unusual and obscure grains, milled onsite to create tangy, delicious and natural breads. There are 13 different breads available from Cress Springs at most times.
You can find Cress Springs at the Dane County Farmer's Market year-round. They also have a small selection at a grocery store in Mt. Horeb and are at the Westside Community Market April through November.
They also do a local Madison delivery route and ship their products.
Besides their breads they have a selection of granola and pastries available.
They hand-roll croissants and make tarts, scones, bars and more.
Using locally sourced and seasonal ingredients, they stock their market shelves and keep the Madison-area masses happy and full of the very best grains.
