It’s made by boiling down pork and a bit of pork liver for a long while, then mixing it up with rice and putting it into a sausage casing. It’s incredible.

Just outside of Lafayette you find the town of Scott, which is known as the Boudin capital of the world.
This is no small part to Best Stop, which was established in 1986.
When you visit this small, family owned place, you’ll be welcomed right away by the bright red paint and homey atmosphere.
But don’t get confused—this is a full time Cajun meat operation.
They reportedly sell 2000 pounds of boudin every single day!!
Not to mention all of their other specialties.
What makes this place special is that they are always innovating.
Their pepper jack cheese boudin balls take the delicacy to a whole new level. And the new boudin egg roll, (pictured above,) will blow your mind.
They also have a wide variety of other special Cajun meats, including stuffed quails, Turducken, Alligator meat and seafood pies.
The hardest part of visiting here is not knowing what to order.
