Charlie Parker’s in an unassuming Springfield diner that’s housed in a Quonset hut, but it is home to an Illinois classic: its award-winning horseshoe sandwiches. And folks flock from all over to chow down on horseshoes at Charlie Parker’s.

The horseshoe is an open-faced sandwich, typically meat on bread, that’s smothered with potatoes (fries are the most typical topping), cheese, and sometimes gravy or another sauce.
Its “breakfast shoe” has won contests, and the diner has been featured on the Food Network’s “Diners, Drive-Ins, and Dives.”
Charlie Parker’s is known for more than just horseshoes, though. It’s a breakfast institution where folks come for heaping helpings of biscuits and gravy or to try and tackle the massive 16-inch pancake (it’s served on a pizza tray).
