Have you ever tasted smoked salmon candy?
Washington State is a slice of paradise for foodies. From our fresh seafood to some of our unique sweet treats, there is so much to satisfy any craving and excite the taste buds. However, there is one treat that may surprise those from out of state or may make them scratch their heads — smoked salmon candy. Yes, you read that right … fish that is smoky, salty, and sweet all combined into one. Smoked salmon candy is a treat you need to try at least once.

So, what exactly is smoked salmon candy? It is a piece of salmon that is brined (submerged) in a sugar and salt mixture for extended periods of time to maintain moisture and flavor. Typically, this brine contains salt, brown sugar, and a variety of spices. The salmon is then cold-smoked to enhance flavor and then hot-smoked to develop a perfect balance of sweet and salty.
And while we love smoked salmon candy, this has been a treat in our corner of the world for years. This treat is nicknamed "Indian Candy," and for good reason. It dates back to the Native American tribes in the Pacific Northwest centuries ago. To preserve the salmon the tribes caught, they would use smoking and drying techniques. The tribes would often smoke the salmon until it was more of a jerky-like texture rather than the tender texture you'll find with most smoked salmon candy today.
Fun fact: There are five main species of Pacific Salmon in the Pacific Northwest: Chinook, Coho, Chum, Pink, and Sockeye. The Native American tribes were known as "Salmon People" and believed that salmon was a gift from God.
If you are hunting for smoked salmon candy, you can find it on many candy store shelves, farmers' markets, and meat shops in the Pacific Northwest. I recommend you actually purchase the candy from several vendors, as each may create this unique treat just a little differently — you may find that you like one product from a particular company over another.
Of course, if you aren't quite sold on the idea of "candied" salmon, you can always try it prepared in one of many other ways. But I recommend you give it a try. Your taste buds may thank you.
