Forget the pineapple debate — there’s a much more important conversation to be had when it comes to pizza: the crust. Depending on where you live, you probably feel strongly about this, and I’m right there with you. Although I’m a native Texan, my family has roots in Chicago going back centuries, so my love for deep-dish pizza knows no bounds. It took me a long time to find the best deep-dish pizza in Texas, but after years of searching, I can confidently say I’ve found it at Primo Brothers Pizza in Dallas.
With two locations in the DFW area — one in Dallas proper and one in Sachse — Primo Brothers opened in 1982 and has been dishing out authentic Italian food ever since. The restaurant is family-owned and prides itself on cooking from scratch with only the best ingredients, and you can taste the quality and passion in every bite.
Primo Brothers not only serves deep-dish pizza, but it's also one of the most popular menu items. Many of their signature pies are available in deep-dish, ranging from classic cheese or pepperoni to more inventive options like Hawaiian (ham and pineapple) and hot honey. You can also build your own pizza if you prefer to choose your toppings. Sizes are 12x12 and 16x16. You may want to go with the larger size even if you aren't feeding a crowd because it's hard to stop at just one slice.
For me, a good deep-dish pizza has crispy edges that deliver an audible crunch before giving way to a chewy (but not doughy!), fluffy center. Very few restaurants outside of Chicago hit the nail on the head, but Primo Brothers gets it just right. The homemade sauce and fresh mozzarella are the icing on the cake.
Don't feel like you have to limit yourself to the deep-dish. I suggest trying it at least once, but the menu at Primo Brothers is enormous, so it would be a shame not to sample a few other items. The restaurant also offers New York-style thin crust pizza as well as calzones, subs, and pasta dishes. You'll also see appetizers like fried calamari and a handful of desserts. The Chocolate Eruption Cake, with chocolate mousse, nuts, chocolate chips, and turtle cheesecake cubes, is a must-try if you want to cap off your meal with a bit of decadence.
