Blink And You’ll Miss This Tiny But Mighty Restaurant In Small-Town Nebraska

No matter how small the town, its residents have to eat. And when those residents don't feel like cooking, they're going to need a place in town that will do the hard work for them. Luckily, there's a locally-owned, small-town restaurant in just about every town in Nebraska. Let's take a little trip to the tiny town of Jackson, Nebraska to see just what's on the menu at this restaurant that started life as an adorable Winnebago trailer.

With a population of around 200, Jackson is a sweet little community near South Sioux City in northeastern Nebraska.

For a long time, residents and visitors enjoyed chili dogs and delicious ice cream at a drive-in restaurant called Andy's Sweet Tooth. When the business closed, a hole was left in Jackson's dining scene.

A few years later, Jackson's own Tess Etherington decided to do something about that.

She and her husband bought a vintage Winnebago camper and converted it to a kind of lunch truck in their driveway, adorably naming it The Lunch Box. They added a few shaded picnic tables, and the response was overwhelmingly positive.

A few years later, business was so steady that The Lunch Box was able to move into the building previously occupied by the Sweet Tooth. With a lot of help and support from family and the community, the restaurant opened in June of 2022.

The Lunch Box's menu isn't large or fancy; it's just good fast food, served hot and with a smile.

Your choices include Italian beef sandwiches, hot dogs and chili dogs, pulled pork sandwiches, and sloppy joes.

A selection of sides will round out your meal and fill you up until dinnertime.

You can even find the same ice cream that was so beloved at the Sweet Tooth. The owners of the Lunch Box are committed to keeping that local legacy alive by continuing to offer familiar desserts alongside creative specials.

As the name implies, the Lunch Box is open for lunch. However, it's also open early so you can snag one of its locally famous cinnamon rolls or pecan rolls.

These rolls are big, they're delicious, and they're sure to satisfy your own sweet tooth. Is there any better way to start the day than with fresh baked goods? We sure can't think of one.
