I remember when the building that PB Boulangerie Bistro is in used to be a clam shack. Times have certainly changed for this location in Wellfleet, a small town on the Cape Cod peninsula. I've spent nearly my entire life coming here for summer vacations and the occasional fall or winter day trip. From a greasy spoon to a refined boulangerie, this building at 15 Lecount Hollow Road was transformed nearly 15 years ago.
Bringing a true taste of France to the Cape, I always look forward to the coffee and array of pastries and other French goodies made here. It transports me back to France without leaving the state, and in my opinion, PB Boulangerie and Bistro the best French boulangerie in Massachusetts.
Whenever I walk to or park in the lot of PB Boulangerie, just the sight of its colorful exterior and the rainbow of tables of Adirondack chairs bring a sense of joy to my heart. It means I have arrived at one of the most authentic French bakeries in Massachusetts!
Open since 2009, PB Boulangerie and Bistro is owned by Chef Philippe Rispoli who is from France. Having worked at Michelin Star-rated restaurants in Lyon and Cannes and earning a Michelin Star himself when he worked at Daniel Boulud Brasserie at the Wynn Resort in Las Vegas, Navada, Chef Rispoli brought his culinary mastery to Cape Cod. And we are incredibly lucky to have him here!
If you're here in the height of tourist season in the summer, chances are that there will be a line out the door. Sometimes that line has a few dozen people because that's how insanely delicious all the goodies inside are. People wait patiently and you are allowed to go inside when the traffic light by the door turns from red to green. The bakery itself is small so that is why the number of people allowed in is limited.
But it's worth the wait!
Whenever I come here with my mom and my kids, we end up getting quite a few items. My mom loves the bread and will purchase one or two loaves, and will chat with Chef Philippe in French if he's there. The kids will choose some of the divine PB Boulangerie pastries like a tart or a Chocolate Bomb which I highly recommend! There's just something so satisfying about this treat made with almond chocolate sponge cake, chocolate mousse, a crème brulée filling, and a cocoa glaze.
The PB Boulangerie croissants are among the best I've ever had outside of France. While regular croissants are available, I urge you to try an almond croissant (my personal fave) or a chocolate almond croissant as well. With flaky, buttery crust filled with almost cream or both almond cream and dark chocolate, you'll want to bring at least a dozen home. In addition to breads and pastries, we usually grab sandwiches and some of the soup du jour.
Not only does everything taste amazing at this boulangerie and patisserie but each item is like a work of art. I always find myself photographing all the cases of food when I'm here.
