The Ice Plant in St. Augustine, Florida is a farm-to-table restaurant situated in a 1927 ice plant building.
The restaurant owners intended to keep much of the original elements of the building, like the bridge crane overhead, which used to pick up huge blocks of ice to be broken down.
Today, this space is inspired by the early 20th-century way of living, where having a cocktail was one of the best times of one’s day.
The cocktails are a surprise hit for many who visit and assume this restaurant is solely known for delicious food. These cocktails are made with fresh, house-pressed juices, a wide variety of unique bitters, and specially-developed syrups.
The result? A craft cocktail menu that is unlike any other in the city. What’s more, is that attention to detail is key here, with three different kinds of ice being used within these cocktails—a simple nod to the original building’s use.
