There is perhaps no dish more uniquely Hawaiian than poke, a raw fish salad that usually consists of cubed aku (an oily tuna), he’e (octopus), or ahi (yellowfin tuna) marinated with sea salt, soy sauce, sesame oil, limu seaweed, and chili powder.
