Shotgun Willie's BBQ was conceived in Houston, where owner Bill honed his meat smoking chops. After years of Texas-based study, he relocated to Nashville and opened up a bakery that focused on kolaches, a Tex-Czech pastry.
He began smoking his own brisket for his kolaches, and it drove him to embark on his BBQ. Shotgun Willie's started as a food trailer pop-up in 2016, and by 2017 it had earned the title, "Best Brisket" in Nashville by the Nashville Scene.

Shotgun Willie's opened officially in May of 2020, after the onset of the global Coronavirus pandemic and the Nashville tornado. The brave decision to open up in a difficult economy has endeared Shotgun Willie's to locals and tourists alike, and the thoughtful hospitality and menu make every visit a good one.

Shotgun Willie's uses white oak and pecan wood in their meat smoker, which makes for a deep level of flavor. You'll find prime grade meats on the menu as well, from brisket to pork and small-batch sausage.
Check out this decadent plate of Barbecue-N-Cornbread...add two sides and you'll be full for a good, long while. All meat is slow-smoked with live fire, and you'll want to ask about seasonal specials.
All sandwiches are stuffed with 1/3 of a pound of meat inside a brioche bun. We'd recommend the Braveheart Farms Prime Angus Brisket if you're looking for a recommendation. Sides include dill pickle tater salad, poppyseed slaw, queso y mac, and 4-bean baked beans.
