Cookies are the most satisfying dessert (at least they are to me). Lucky for those living in New Mexico, there's an official state cookie!
Biscochitos are a traditional cookie here in New Mexico and are often part of major celebrations such as weddings, graduations, and the holidays. And in 1989, they became the state's official cookie.
If you've never had biscochitos before, they are simple sugar cookies with a hint of cinnamon and anise (licorice). And the texture is one that just melts in your mouth. Delicious!
How does a biscochito ice cream sandwich sound to you? A layer of your favorite ice cream between two biscochitos is a nice take on New Mexico's official state cookie.
One bakery that really knows how to make biscohcitos is Celina's Biscochitos in Los Ranchos de Albuquerque.
Not only does Celina's make traditional biscochitos but also flavored ones like red chile, green chile pecan, lemon, and cocoa chocolate chip.
