The place that the green chile cheeseburger is believed to have originated is The Owl Bar Cafe in San Antonio, New Mexico.
As the story goes, scientists working on the Manhattan Project would frequent this establishment. It became a sort of hangout spot for them to have drinks and grab a bite to eat.
They would order cheeseburgers with a side of green chile. Then, one day, the dishwasher didn't show up for work. Because of this, the bowls that the side of green chile would go in were dirty. So the chef decided to improvise.
He put the green chiles directly on top of the cheeseburgers. And, thus, the iconic green chile cheeseburger was born!
