Get Your Lefse Fix At A Minnesota Pop-Up Drive Thru This Holiday Season

For the past few years, Kim Englund has been scratching an itch that Minnesotans with Norwegian - and other Scandinavian - backgrounds tend to get around the holidays: the yen for lefse. And, it seems, Englund's pop-up stand along a Douglas County Road is now a favorite place for connoisseurs of the tasty potato flatbread to get their fix of lefse in Minnesota.

Douglas County folks in the know have been clamoring for Kim Englund's lefse for several years.

Especially around the holidays.

In fact, demand for her delicious product became so great that she had to devise an innovative delivery solution: a pop-up, drive-thru lefse stand.

It's made from a converted hunting stand, and it works perfectly as a lefse drive-thru.

Making your own lefse can be quite an undertaking, so Englund's drive-thru comes as a relief for many folks who otherwise would have had to relegate themselves to store-bought, or worse, frozen lefse - if they could find it at all!

Englund's lefse is a known, quality product with a following, which is why folks seek it out.

...and why the demand is so great!

An order of lefse at the stand consists of three "rounds" - i.e., sheets - of the flatbread for $6.

Pair it with some of Englund's homemade honey butter for a delightfully rich sweet treat.

In addition to lefse and honey butter, you can also buy jams and jellies, as well as Englund's popular jalapeño "Cowboy Candy" at the stand - it's sweetness with a kick!

You'll find the stand located on Douglas County Rd. 1 NW, between Evansville and Melby.

It's open Saturday mornings from 10 a.m. to noon from early November into December.
