At Sazón in the heart of Santa Fe, New Mexico, Chef Fernando Olea serves up some of the best mole dishes in New Mexico.

Chef Fernando Flea came to Santa Fe from Mexico City more than 30 years ago with some of the best mole recipes we have ever had. With more than 30 ingredients, including toasted and ground spices, seeds, chiles and nuts, these deep flavors really make a dish.
