The Crave-Worthy Mexican Cuisine At This Wyoming Restaurant Makes It The Best In The State
When MSN went looking for the best Mexican restaurant in every state, they had their work cut out for them, but it wasn’t surprising that Merry Piglets in Jackson won out in the end. In addition to mouthwatering food and a full bar, the atmosphere is cheerful and festive, just what you’d expect in an eatery with “merry” in its name.
Just a little north of Jackson's town square tucked unobtrusively between shops and other restaurants on the authentic boardwalk is one of the best Mexican restaurants on the planet - and
the best in the state, according to MSN.
You'll find the Piglets at 160 North Cache Street in Jackson. It's open 7 days a week from 11:30 a.m. to 10 p.m.
While the cantina and restaurant may look like just another building from the outside, the interior has personality to spare, and it's not what you'd expect to find in Wyoming.
Lights dangle down, suspended from log beams below a glass-paned ceiling, and a charming thatched awning hangs over the bar. Stepping through the door is like being transported to a quaint little town south of the border.
The walls are a sunny yellow with amusing murals painted throughout the place...
...depicting a band of happy piglets eating, drinking, and being merry.
The atmosphere at Merry Piglets will certainly put you in a good mood, and the refreshments you enjoy while there will sustain it. With a full bar, you can order any beverage you want, but the Piglets has an extensive tequila menu and is known for the legendary margaritas they serve.
Order them by the glass or the pitcher, blended or on the rocks. Try one with the jalapeno-infused tequila for a margarita that leaves a tingle on your tongue.
And, naturally, they support the local brewery.
The street tacos are a favorite, and you can order them with a variety of deliciously spiced meats.
The fajitas are another recommended dish. The veggies are ultra-fresh, and the serving is so big it comes on two plates - and that doesn't include the tortilla warmer!
Actually, Merry Piglets does everything in a big way. The nachos could feed a starving crowd.
Plan on taking home a to-go box that will be good for another meal or two.
The menu is extensive with everything you look for at a Mexican restaurant including quesadillas, chimichangas, burritos, enchiladas, all types of tacos, and the sauces are all house-made.
As for dessert - and, yes, you
will want dessert - the choices are fried ice cream or sopapillas, and you might end up taking some of that to go, too.
