There are a few foods out there that will always be a little polarizing. Limburger Cheese is one of those classic foods that some people will always keep at an arm’s length. While some love the complex character of this smooth and creamy cheese, others compare it to stinky feet or body odor. Love it or loathe it, there’s just one place left to find this unique cheese: the Chalet Cheese Cooperative in Green County, Wisconsin. I got a behind-the-scenes tour of this rare and amazing cheese factory and saw this iconic cheese coming to life. I even got to try some of Chalet’s famous Wisconsin cheese. Here’s what I found – and smelled.

Chalet produces many other types of cheese, as well, and it has a well-stocked case that’s loaded with unique varieties like aged, smoked Swiss and a German-style, foil wrapped brick. They are all awesome! If you visit the factory in the warmer months, you might want to bring a cooler, so you can bring lots of things home. The cooperative also has a retail store in New Glarus, where my wife also found some interesting wine. Learn more about Chalet Cheese Cooperative on its website.
