This Old-Fashioned Ice Cream Parlor In Washington Will Make You Feel Like A Kid Again

Washington has plenty of adult-oriented restaurants with menus fit for foodies, especially our bigger cities like Seattle. But sometimes it’s nice to forego the fine dining and enjoy a classic meal just like you did when you were younger—meaning it ends with dessert. A few months ago, Shelby’s Bistro and Ice Creamery opened in West Seattle… and between the sundae menu and the vibrant 1950s decor, a visit there feels like a step back in time.
We’re aware that these uncertain times are limiting many aspects of life. Enjoy a waffle cone, indulge in a two-scoop sundae, a double banana split (pictured here), or dare to try the Mt. Rainier, which has 12 scoops of ice cream covered in sundae toppings. The Mt. Rainier is meant to be shared, but it does say “serves 1-12” just in case any solo diners are brave enough to attempt it.

They serve salads, soup, sandwiches, pizza, and delicious entrees like gnocchi and braised beef short ribs.


Shelby worked for several restaurants’ catering and corporate departments for 20 years before switching to the human resources industry. His last corporate job was for the Starbucks HR department. But his goal was always to open his own ice creamery, so his new establishment is truly a dream come true.

That may be because Shelby loves Disneyland (he always gets a hot fudge sundae when he goes) and has attended all the Disney institute’s Professional Development programs at Walt Disney World.

If you stop in, you’re likely to see Shelby himself. He works hard to support his team and likes to personally greet each guest.

Shelby’s definitely has the charm of a 1950s soda shop, but it’s also shiny and new. If you’d prefer to dine in one of our state’s oldest restaurants, here’s a great list to choose from.
