When we say “breakfast,” what do you think of? Pancakes? Waffles? Cereal? When Drew Shader thinks “breakfast,” he thinks Biscuits, and in 2009 he saw a serious lack these flaky, buttery, oft-overlooked treats in his hometown…thus, the Biscuit Bus was born. Shader and his wife, along with chef Jonathan Larsen, set out to create a gourmet food truck (one of the first in the state) featuring this classic Southern breakfast. By elevating their delicious pastries above the standard “biscuits and gravy” into a unique concept featuring all kinds of fresh flavors, they proved to Denver (and the rest of the nation) that biscuits may just be the most perfect breakfast imaginable.

Their menu features creative reincarnations of the old school biscuit sandwich, including dishes with fried chicken, catfish, pulled pork, jams, jellies, sauces, fruits and more! Their success was nearly instantaneous, leading the biscuit-loving trio to open up a permanent shop in the back of Shader’s bar, The Atomic Cowboy, and the Denver Biscuit Co. has grown to enjoy an impressive following after being featured on the Cooking Channel, Food Network’s “Diners, Drive-Ins, and Dives,” and even CNN and Headline News!
