Does a pancake breakfast sound like it would hit the spot this morning? Then hop in the car and head to Addi's Diner in Springfield.
This eclectic little diner has been serving up delicious food for years, and it's full of fun, vintage mementos. Check out the license plates, antique signs, old gas pump...
Yes - pancake. Singular. This place doesn't offer a stack of pancakes. Why? Because one is enough. More than enough, really. It hangs at least five-six inches off the plate.
The "Big Plate" comes with one pancake, two sausage links or strips of bacon, and one egg. If you didn't see the photo, you might think it sounds like a pretty small breakfast.
If you don't want breakfast meat and an egg, just get "The Hotcake." You can get it with just syrup and butter, or get fancier with chocolate chips or blueberries, strawberries and whipped cream.
We should mention that many of the other menu items are delicious, too. Try a huge omelet, a scramble, corned beef hash, and more. The portions are all hearty.
