Few things in life are as comforting as a hot, steaming bowl of noodles. Ramen really is the perfect meal. College students know this, and Portlanders do too, thanks to Kinboshi Ramen. This ramen restaurant in Rose City dishes up the best authentic Japanese ramen in Oregon, and it absolutely belongs on any foodie’s bucket list.
In 2016, Tokyo-based restaurant franchise Marukin Ramen opened its first U.S. location in Portland.
Japanese chefs Masaji Sakai and Mayumi Hijikata headed up the new Portland restaurant, ensuring that Marukin’s signature ramen bowls were up to their high standards.
Marukin’s traditional miso ramen is based on a 1,300-year-old recipe and prepared in small batches. There is a lot of history in these bowls of noodles.
As one of Portland’s most popular authentic Japanese ramen restaurants, Marukin takes a lot of pride in being the first to introduce Oregonians to Hakata style ramen.
Hakata ramen is a type of ramen that is popular throughout Japan. This simple meal consists of a silky smooth pork bone broth (tonkotsu) with extra-thin noodles and minimal toppings.
But this ramen house isn't simply about the traditional; the restaurant is proud to be a part of the Portland dining scene, and the menu has grown and evolved to reflect that.
The restaurant has also added a tonkotsu (pork broth) ramen made with pigs from Oregon’s Carlton Farms, and a creamy, warming paitan (chicken broth) ramen that's perfect for chilly days in the PNW.
