Medina is a delightful small town of about 26,000 that's big enough to have a bustling business district, but small enough that everyone knows your name. Medina is best-known for its annual Ice Fest, but that's not the only standout on this town's resume.
What sets Swine BBQ apart, you ask? Easy: the barbecue! This is traditional Texas-style smoked meats made with heart and soul -- and time. Lots and lots of time.
Every night, hickory splits are loaded into the firebox and Swine's fresh, locally-sourced meats, massaged with their special-recipe rub blends, are slowly cooked for up to 18 hours.
The end result is nothing short of BBQ beauty: long strands of succulent pulled pork, tender pork ribs, flavorful beef brisket, plump sausages, and juicy (never dry!) turkey breasts.
Folks rave about the barbecue plates from Swine, which come piled high with 6 ounces of meat plus bread, pickles, onions, and sauce. Bigger appetites can opt for a "sampler" platter of up to three meats or even an "oinker" spread that serves up to six diners (if you decide to share, that is...).
Specials often grace the menu, too, and you should absolutely order whatever it is. This, for example, is Swine's St. Louis-style pork ribs, stripped from the bone, placed on a brioche bun and topped with slaw, pickles, and the restaurant's signature KC Sweet sauce. Wowza!
