We’ve heard that there’s a meat shortage affecting many communities, and we know Kansas is all about meat. When the store is meatless and there’s not a scrap to be found, you should try out these classic meatless meals for a new twist on many of your favorite styles of good Kansas cooking. Any Kansan could learn to love these meals during the meat shortage happening in many areas across the US. Will you try any of them yourself?

1. Cooking casseroles may take the load off for a night or two. Cheese and an oven can save so many meals.

I've eaten green bean casserole for dinner before, because it's just that tasty.
2. Fresh pasta sauce for spaghetti, no meat needed. Making it yourself is half the fun!

Add some cheese on top, make some garlic bread in the oven, and you've got yourself a fantastic dinner.
3. Chicken and noodles with mashed potatoes, but replace the chicken with a vegetable like squash or zucchini for something just as tasty but a little lighter.

It won't ever be the same as chicken and noodles, but it's definitely delicious if you get the right broth and put care into seasoning.
4. Make bread bowls for soup night! Whether you're making clam chowder or zucchini and noodles, they'll make your meal even more filling.

You can also try your hand at making zwiebach bread rolls! It's a potato based bread, and it tastes amazing. Might not be the best for bread bowls, though.

5. Time to make those homemade pies you always grab a slice of at your local diner!

Making pies isn't usually too hard, and if you're lucky, you can even ask family for their recipes. Otherwise, go with your gut and find one that looks good to try out.
6. Since tacos might not be happening, chow down on a seven layer dip instead!

Tortilla chips are all you need to finish off this meal, unless you'd like to add more lettuce and broken taco shells to make it taco salad instead! Our small town swimming pool used to make walking tacos in Dorito bags with a similar mixture.
7. Biscuits and peppered gravy might not be the same without your sausage, but it's definitely still amazingly tasty.

8. Try out a hearty stew without the meat.

There is still plenty of beef broth available to use, and no meat means you can add in more veggies. I love loading mine up with mushrooms and potatoes at the end to give it extra oomph.
9. Fresh omelettes, especially with spinach, mushrooms, and onions.

Add peppers for a special zing, or cover it in salsa like you would any other day. Just don't skip the cheese!
