Chile is serious business in New Mexico. Walk past any grocery store or restaurant in the height of chile season and you’re bound to catch a whiff of them roasting over a fire outside. The combination of smokiness, crisp flavors, and a surprising heat that would make any diner sweat bullets are exactly why you can find it as a primary ingredient in plenty of dishes.
One example? The green chile cheeseburger, New Mexico’s own iteration of an American favorite.
And who would have guessed that one of New Mexico’s most famous green chile cheeseburgers comes from the kitchen of a highway service station?
Laguna Burger is a roadside restaurant with a classic diner feel, checkered floors, an open-air kitchen, and plenty of Route 66 memorabilia to peruse.
The restaurant has two original locations along I-40 - one in Laguna and the other in Rio Puerco - as well as a newer Albuquerque location on 12th Street.
The burgers here are hefty and spicy - just the way we like it. Enjoy it with a side of thin-cut fries, onion rings...
...or perhaps a side of chile cheese fries or Frito pie.
If you want a more urban experience, you can visit the Albuquerque location for a change in atmosphere and menu.
While the roadside locations feature food that is quick and easy to eat on the go, the Albuquerque eatery slows down the experience and expands the menu. Enjoy a wider variety of burgers, hot dogs, salads, and shakes.
Also found at the Albuquerque location: alcoholic beverages.
Make your meal a little more refreshing with a salt-rimmed margarita or spiked lemonade. Or, opt to finish your meal with one of Laguna Burger’s shakes. The Duke Shake? Creamy and absolutely delightful on a warm day.
