Saucy, smoky, juicy, and piled high with all the accoutrements, mouthwatering barbecue isn't just for casual backyard get-togethers in summer. It's a daily necessity in our book. But this ain't Texas! (Or Kansas City or the Carolinas), which means MN serves up its own style of barbecue deliciousness. Hidden away in a cute little roadside trailer, Black Market StP serves up some of the best BBQ in Minnesota, and yet it defies easy description. You'll just have to order up some of their smoked meats and try it for yourself to see what we mean!
Although Black Market StP has a regular location where you can snap up its succulent smoked meats, it doesn't have an actual building.
The proprietors set up some chairs and tables, and perhaps a tent, so you can sit and enjoy your food and maybe a beverage - picnic style.
The eatery even hosts live music events every now and then.
But the facility, itself, is little more than a smoker on wheels - "down by the river" in St. Paul.
But oh what a smoker it is!
Based on the orders it receives throughout the week, Black Market StP BBQ will slow smoke as much meat - ribs, brisket, pork shoulder, and bacon - as it thinks it will need for the week.
The smoke flavor you're tasting (and that will be causing those tastebuds to come alive before you're even in the park!) comes from locally grown and harvested Black Cherry Wood. This is Minnesota BBQ at its most fresh!
And maybe just a little extra for the first-come-first-served crowd on some weeks. Maybe.
But usually, it's sold out before it even opens.
Folks snap up Black Market's babyback and beef short ribs, rib tips, pork shoulder, and bacon.
And the beans. You HAVE to try the beans!
But it's the brisket - the perfectly tender, juicy, and smoky brisket - that put Black Market on the map and keeps folks lined up down by the river every Saturday.
You see, you place your order online earlier in the week, then on Saturday, 'que lovers from all around gather to pick up their orders, make new friends, listen to music, and enjoy some of the best smoked meats you'll find in the Land of 10,000 Lakes.
Even in winter.
Black Market's signature dry rub blend is the perfect way to warm up on a chilly winter day. You'll find this incredible BBQ pit stop "down by the river" on Plato Boulevard.
While this Minnesota BBQ restaurant may not have a brick and mortar location, it's a barbecue experience that's part of a long tradition of pop-up smokers in St. Paul. But keep in mind that you have to place your order on Black Market's website or Facebook page early in the week, because it almost always sells out.
Have you tried Black Market StP's barbecue? Tell us about your experience in the comments. What are some other Minnesota eateries with food so good that it regularly sells out? Let us know!
While you're here exploring St. Paul, stick around for a while! Kill some time browsing the vintage shops along Selby Avenue on the way down to pick up your barbecue feast, then peruse one of our favorite neighborhoods.
