Would you believe me if I said you could grab some actually authentic Neapolitan pizza here in Idaho? It seems far-fetched but believe it or not, there's a restaurant in our state that's been certified by Italy itself for serving up authentic Italian-style pizza. This certification is no joke. A group called the "Associazione Vera Pizza Napoletana" is dedicated to preserving what they consider "true Neapolitan pizza". There are fewer than 100 restaurants in the U.S. that earned this recognition, so it's pretty amazing to think that one of them is right here in Idaho! Located in Boise, Flatbread Neapolitan Pizzeria's mission is to stay true to the traditions of Neapolitan pizza—and they certainly have. After all, they've been officially certified by a group based out of Italy called the Associazione Vera Pizza Napoletana.
According to this organization, there are fundamental rules you must follow in order to create true Neapolitan pizza. For instance, the pizza must be round with a diameter of 30-35 centimeters. The pizza must also present a raised edge, swollen and free from burns.
Another rule states that the pizza must be soft and elastic, and it absolutely must be cooked in a wood-fired oven. No exceptions! With a temperature between 800 and 896 degrees Fahrenheit, the pizza is fully cooked in just 60-90 seconds.
It's apparent that Flatbread is committed to authenticity, but they are also committed to supporting the community. Their pizzas are always made with the finest ingredients, all of which have been locally sourced.
This isn't your typical sort of pizza. On the menu you'll find a variety of different types of pies, all of which contain the perfect combination of flavors and textures. The Margherita never disappoints but their specialty pizzas really hit it out of the ballpark.
Try out the "Alfredo the Grate" which comes with chicken, parmesan, bacon, and artichoke hearts or the BBQ Chicken which comes with fontina, bleu cheese, red onion, green onion, and cilantro. No matter what pie you settle on, you're bound to be amazed!
