Many restaurants all over the country offer appetizers made with tater tots, but totchos were invented right here in the Beaver State. If you Google the word “totchos,” you’ll get a page full of recipes to show you how to make this wonderful appetizer, so you can make ’em at home, but the place to enjoy them is from their birthplace: Oaks Bottom Public House.

Lompoc Brewing got its start back in 1996, and if you're a beer-lover in Oregon, you know it well. You can find it at bars offered all over the state, and Lompoc also has three pubs where you can enjoy its brews, along with some tasty food.

Each of the pubs offers great atmosphere and tasty pub fare, but if you want to nosh on totchos at the site of their creation, you'll head to Oaks Bottom Public House in Southeast Portland.

Jim Parker loved craft beer, and helped open many pubs around the Pacific Northwest. He was working on the menu for Oaks Bottom Public House when he hit upon an idea.

He convinced the owner and cook to try combining tater tots with the kinds of toppings typically used for nachos - cheese, sour cream, salsa, jalapenos, tomatoes, and olives. Jim passed away earlier this year, but his contributions to the craft beer scene, and his invention of this delicious appetizer will never be forgotten.
