Boudin is one of the most unique specialties in Louisiana. While chefs always put their own spin on it, each recipe is a variation of the base ingredients: pork, onions, green peppers, rice, and seasonings. It’s extremely versatile, being used in traditional Cajun/Creole dishes for years. There’s one restaurant in Alexandria that has their own signature boudin recipe and they’ve incorporated it in some unique (and delicious) ways, and we love it.
